In order to get a completely accurate number of riders that did the full seven day ride, you will probably have to contact the organizers of RAGBRAI. I’m sure you can contact them through the RAGBRAI website.
During my ride, I did see plenty of men and women in their 60s and 70s that were riding each day. I’m unsure if they did the full seven days, but there were a few people that I saw pretty much every day.
My advice is to not base your decision on what other people your age are doing. If you feel like you can do it, then go for it. I would suggest taking a few longer rides in a week and see how you’re feeling. I would also consider finding a team that can give you full support during the ride and possibly allow you to ride in a bus/van during one of the days if you’re not feeling up to riding.
